Here’s what happens when our meal plan contains mostly things that need long cook times or significant preparation: grilled cheese, chips, and pineapples. Last night’s dinner was the same theme: popcorn chicken, pasta salad from a box, and mandarin oranges. Someday, I’ll learn….

Used up some leftovers for this one: Barbecued cherry sausage, blue cheese mashed potatoes, and green beans.

After a Sunday afternoon of working outside, we had grilled chicken, green beans from last summer’s garden, and homemade bread. Note the new butter crock – no refrigeration required, so the butter stays spreadable!

Oh, how I’m looking forward to having our own eggs again…. In preparation, my version of an Egg McMuffin: egg, bacon, cheddar cheese, and green peppers. We also had smoothies, but they didn’t get in the picture. Meg put her smoothie on her table in the kitchen, walked to the other side of the room, sat down and said, “Watch smoo-wee, Mama?” Apparently, “smoothie” and “movie” are the same to an almost-two-year-old.

I forgot to take a picture of our actual Valentine’s Day dinner, but six of us had pasta, salad, and bread for our “usual” Tuesday night dinner. Then, we had this cake.

A Pinterest recipe: chicken breasts, cream cheese, salsa, corn, and black beans cooked all day in the crock pot. It looked kind of gross, but served with cheese, spinach, and more salsa on tortillas, it was pretty good! I made the leftovers of the meat concoction into a casserole with some rice and tortillas crunched up on top.
